Spanish Chicken Traybake
This colourful all in one dish takes just 30 minutes and combines the freshest tomatoes, onions, peppers and garlic with spicy chorizo and succulent chicken
1 whole chicken (jointed, your butcher will do this for you)
6 cooking chorizo, sliced
400g cherry tomatoes, halved
1 red onion, peeled and sliced
2 red peppers, 2cm diced
80g black olives, sliced
40g flat leaf parsley, chopped
2 cloves garlic, chopped
Salt & pepper
30ml sherry vinegar
20g smoked paprika
1 jar of Baxters Tomato Chutney
Drizzle of Rapeseed oil

Pre heat a deep tray in the oven at 170°C.
Place the Chicken joints in the tray, sprinkle with the paprika and season and add the chorizo.
Put the tray back in the oven and bake for 10 minutes.
Add the tomato, pepper, onion, garlic, olives and tomato chutney and cook for a further 10 minutes.
Add the sherry vinegar and cook for another 5 minutes.
Sprinkle with parsley and serve.
