Mushroom 'Sausage' Rolls

You’d be forgiven for thinking these look like a classic sausage roll, but both veggies and meat eaters alike will be pleasantly surprised by the rich mushroom favour.

  • 50ml oil

  • 1 onion

  • 1 clove garlic

  • 600g mushrooms

  • 1 sprig thyme

  • Salt & pepper

  • 50ml Madeira

  • 50g Dijon mustard

  • 1 roll of premade puff pastry

  • 1 egg yolk

  • 50g of mixed sesame seeds

  • 1 jar Baxters Caramelised Onion Chutney

Chop the onion, garlic and mushrooms.

Fry the onion, thyme and garlic in oil until soft.

Add the mushrooms and cook until soft and continue to cook until all the moisture has evaporated.

Add madeira and reduce until mix is dry, season then set aside to cool.

Unroll pastry and cut in half lengthways.

Spread a line of mustard down the centre of each piece of pastry.

Top with the mushroom mix and roll over. Bruch the sides of the pastry with egg yolk to stick.

Crimp the edges with a fork then trim to tidy up edges.

Brush the top of the roll with egg yolk, sprinkle with the sesame seeds and then place in the fridge to firm up.

Once firm slice into bite size rolls and then bake at 180°c for 25 minutes.

Serve hot with the Caramelised Onion Chutney.
