This simple salmon dish makes the perfect healthy mid-week tea with minimal effort.
Cucumber & New Potato Salad
Cut the potatoes into even sized pieces, cover with cold water and season.
Boil until soft.
Meanwhile mix the oil, vinegar, mustard and season to make a dressing.
Drain the potatoes and while still hot toss in the dressing and allow to cool.
Once cooled add in all the other ingredients and serve.
