Rainbow Veg Salad
With the weather getting warmer we’re loving trying bright and crunchy salads to go with our new dressings!
100g red cabbage
1 yellow pepper
1 red chilli
1 head of broccoli or bunch of tenderstem broccoli
6 spring onions
1 bottle of Baxters Lemon & Kefir Dressing (or try with any of our other Dressings!)
100g rocket (spinach or any mixed leaves would also work)
50g pomegranate seeds
50g dried cranberries
*you can really add any fresh veg you have in the fridge that needs used up

Shred the red cabbage finely and cut the pepper and chilli into fine julienne.
Peel and julienne the carrot.
Cut the broccoli into florets and blanch for 1 minute.
Shred the spring onion and chop up the coriander.
Mix all of the ingredients in a large bowl with 4 tablespoons of the dressing, ensuring the salad is all evenly coated.
Serve straight away sprinkled with more coriander and drizzled with more dressing to taste.
Fruit adds a freshness to this salad but if you can’t get pomegranate seeds then thinly sliced mango, apple and pear all work well in salads too.
