Halloumi & Peach Salad
3 ripe peaches
30ml rapeseed oil
Salt & pepper
1 red onion
Baxters IngredientsMango, Coconut & Kombucha Dressing
Slice red onion thinly into rings, place in a bowl and marinade in 6 tbsp of the Dressing for 30 minutes.
Dice the sourdough, drizzle with oil and season, then bake at 180°C until golden and crisp
Cut the peaches into wedges, removing the stone.
Slice the halloumi.
Heat a griddle pan until smoking hot and add the peaches and halloumi cook for 2 minutes on each side until they have a nice golden colour, then set aside to cool.
Add the rest of the ingredients to the bowl with the onions and Dressing and mix well.
Serve straight away!
