The Audrey Baxter Signature Range Caramelised Shallot Onion Relish

Mild, sweet shallots are slowly and gently caramelised with butter and a little sugar. Italian Balsamic Vinegar of Modena PGI adds an intense brown colour and richness with bitter-sweet woody overtones. Yellow mustard seeds add texture and give the relish a light spice along with cayenne pepper.
