Smoked Bacon and Three Bean Soup

Double-smoked, dry-cured bacon and a wonderful bean medley make this Chunky Smoked Bacon and Three Bean Soup a sumptuous meal. Two types of beans would have worked well, but three works even better: Red kidney, Borlotti and Canellini. Of course, we didn’t just stop at bacon and bean for this soup, we also added: Red lentils, tomatoes, carrots, onions spinach, green pepper, garlic, basil, coriander and just a hint of chilli.
