Red Lentil Dahl and Beechwood Smoked Bacon Soup

 

In search for the perfect bacon for this soup we left no rasher unturned. One year and twenty one varieties later we declared Beechwood ham the winner. It’s double smoked on beechwood chips and dovetails superbly with pureed red lentils and vegetables to create this thick and spicy soup. The final touches are a mix of spices – coriander, turmeric, ginger & chilli to name but a few.
