Italian Wedding Soup

 

Despite its title this delightful Italian soup is not for serving up at weddings. The name refers to the term ‘minestra maritata’ (married soup) where ingredients are married together. So for a real taste of the Mediterranean we brought together mixed meatballs with crisp green beans, tomatoes, petit pois, leeks and short-cut spaghetti then finished off with a dash of basil infused olive oil.

    The best way to serve Baxters Italian Wedding soup is to drizzle with some good quality extra virgin olive oil. Grate a little fresh parmesan (we recommend Parmigiano-Reggiano) sprinkle over and enjoy with garlic bread and someone you love.
