A delicious recipe for scones using Baxters Signature Passion Fruit & Mango Curd - simply classic!
- Rub in the butter and flour until the mixture resembles fine breadcrumbs. Stir in the sugar. Make a well in the centre of the mix and pour in the milk. Gradually bring the flour mix into the centre to make a soft dough.
- Turn out onto a floured surface and knead very lightly. Pat out to about 2cm thick and cut out using a 5cm cutter. Place on a greased baking tray and brush with the beaten egg. Bake in a preheated oven at 160 degrees centigrade for 12 - 15 minutes.
- When ready place on a wire rack to cool.
- Simply split the scone and top with whipped or clotted cream and a large spoon of curd.
