Baxters Orange Marmalade Loaf

  1. Line and grease a small loaf tin.
  2. Sieve the flour and baking powder into a mixing bowl. Rub in the butter until mixture resembles fine bread crumbs.
  3. Stir in the sugar and orange zest then add the milk, whisked eggs and half of the marmalade mixing well to achieve a smooth batter.
  4. Pour into the loaf tin and bake in a preheated oven at 175°C for 1 ¼ -1 ½ hrs.
  5. Allow to stand for five minutes, then turn out onto a cooling wire.
  6. To make the glaze, pour the remaining marmalade into a pan and add an equal quantity of water.
  7. Heat the mixture until warm, then using a pastry brush, brush evenly all over the cake.

  • Easy to make and absolutely delicious. Note that the method doesn't mention the eggs so I added them with the milk and marmalade. I used 3 heaped tbs of marmalade in the cake and 1 heaped tbs for the glaze which was sufficient. Next time I'll make two loaves and see if one makes it to the freezer.
