Using a sharp knife, remove the crusts of the bread. Don’t pile the slices on top of each other, do them one at a time as this will stop the bread from squashing and help to give perfect cubes. Next cut each slice into strips about 1cm thick. Turn the strips around and cut into 1cm cubes.
Place the cubes of bread in a bowl and drizzle with the oil and toss the cube to ensure an even coating. Season the bread now again tossing to get even distribution.
Place on a large tray in a single layer trying to spread out as much as possible. Place in a preheated oven at 190°C for about 8 minutes or until the cubes are golden brown. Turn the cube a couple of times during cooking to help give an even colour.
Simply serve with soup to give an added texture.
This is a basic crouton recipe and can be adapted to suit the soup you wish to serve them with for example;
For Baxter’s Spicy Parsnip Soup try sprinkling a Tsp of mild curry powder onto the bread when seasoning.
For Baxter’s Cream of Tomato try sprinkling in a little dried Basil or Oregano at the seasoning stage.
Or for Baxter’s French Onion Soup try cutting the Croutons a bit bigger the covering with grated cheese and melting under the grill.
