Beetroot Salad- Greek style
A delicious Greek style salad with all the usual suspects such as feta cheese, lemon dressing and olives, but with a little red fun added in the shape of Baxters Rosebud Beetroot.
- Arrange the salad leaves over a large serving platter, and then add the rosebud beetroot, feta cheese, cherry tomatoes, spring onions and olives.
- Make the dressing by putting the oil, honey, lemon juice and mustard into a jar with a lid and shaking it. Season to taste before pouring the dressing over the salad, and then garnish with fresh chopped mint.
