Beetroot Salad- Greek style

A delicious Greek style salad with all the usual suspects such as feta cheese, lemon dressing and olives, but with a little red fun added in the shape of Baxters Rosebud Beetroot.

Method

  1. Arrange the salad leaves over a large serving platter, and then add the rosebud beetroot, feta cheese, cherry tomatoes, spring onions and olives.
  2. Make the dressing by putting the oil, honey, lemon juice and mustard into a jar with a lid and shaking it. Season to taste before pouring the dressing over the salad, and then garnish with fresh chopped mint.
