Beetroot, Roast Tomato & Chilli Salad

Baxters Approved Beetroot, Roast Tomato & Chilli Salad image


  1. Remove the stalks from the cherry tomatoes & thinly slice the green chilli's.
  2. Roast the tomatoes with the chilli’s for 10-12 minutes at 250°C.
  3. Cut the Baxters Baby Beetroot into quarters and place into mixing bowl.
  4. Once cooked add the tomato and chilli mixture to the beetroot and garnish with coriander.
  5. Drizzle with the olive oil, salt & pepper and lightly mix together.
  6. Serve while the tomatoes are still warm.
