Beetroot, Roast Tomato & Chilli Salad
The earthiness of the beetroot perfectly complements the sweetness of the tomatoes to create this delicious summer salad
- Remove the stalks from the cherry tomatoes & thinly slice the green chilli's.
- Roast the tomatoes with the chilli’s for 10-12 minutes at 250°C.
- Cut the Baxters Baby Beetroot into quarters and place into mixing bowl.
- Once cooked add the tomato and chilli mixture to the beetroot and garnish with coriander.
- Drizzle with the olive oil, salt & pepper and lightly mix together.
- Serve while the tomatoes are still warm.
